Rapeseed oil is very versatile cooking fat. It is suitable for cold dishes, as well, as frying. Low content of trans isomers makes it also very healthy, because it does not increase cholesterol levels in blood.
There are two kinds of edible rapeseed oils: cold pressed and refined.
Cold pressed rapeseed oil is produced similarly to olive oil: selected rapeseeds are washed and crushed mechanically, then oil is filtrated, until it gets desired taste and quality. This process is time consuming and rape cake it gives, still contains some oil, which can’t be pressed mechanically anymore, but during this process no chemical solvents are used, what guarantees, that we get completely natural, non-chemically processed oil of great taste.
Refined oil is pressed in high temperature with use of chemical solvents, which allow to get more oil from the seeds, then oil is filtrated and refined.
